I'm pretty sure you can see a boom operator (and perhaps cameramen) in the mirrored surface of the periscope column on-board the Red October when Ramius is receiving Ryan's Morse code from the Dallas.

Also, in the credits it doesn't give Ramius his Captains title. It calls him Marko Ramius, and calls Borodin, the first officer, Capt. Borodin. Everyone else gets their correct title eg. Tupolev, Painter.
