Evil Dead - Chopped Locks
toward the middle of the film (after ash's sis becomes a zombie and is locked up, but before all the carnage), ash's buddy has a short, choppy haircut in certain scenes, which is incongruous with the long curly locks he sports in the rest of the movie. an unavoidable editing mistake which must have something to do with the movie being filmed over a span of two or three years.

I read Bruce Campbell's autobiography, and he said the movie was filmed over 6 weeks, not 2-3 years, so that probably isn't the reason for the error. One thing Bruce DID say, though, was that several extras were used for several scenes. Once the actors turned into zombies, they were usually played by relatives of the crew.
