Near the end of the movie when Elizabeth chains Jack Sparrow to the ship he wasks his hand and pushes the rings all inward to get out of the handcuff. A split second later before turning to look at the Kraken, he holds his hand up to the screen and the rings are suddenly pointing outward in the right positions. There was only one second so Jack wouldn't have had time to turn the rings around.
