Harry Potter and the Philosopher's Stone/Harry Potter and the Sorcerer's Stone - Rubber Rat
When Harry and Ron are sitting on the train going to Hogwarts Ron says "Pathetic isn't he?" and he is holding up his rat, well you can clearly see that the rat is rubber.

I highly doubt they would have found a rat calm enough to sit there and let Ron play with it. Every pet rat, or garden rat as what Scabbers is, will squirm and wiggle and try to get free. Of course they're going to use a rubber rat. The only time I believe they used a real rat is for when the rat runs away.
