In the scene where Qui-Gon Jinn is being cremated, you can see him swallow, then breath out. Look closely, try to look for his adam's apple moving. I guess a Jedi never dies!

Actually, the DVD commentary said that a fake (i.e. dummy) mask is in the scene, not the live actor.
