Fast forward to the part where Robin Williams first meets with Mr. Lindy, when Robin Williams orders what Mr. Lindy is having. Yet, 2 seconds later, he makes a toast with a drink that does not look like water... it's amazing how those waiters can make those drinks appear.

Actually, he toasts with his water glass, if you look carefully. His scotch comes in a different kind of glass.

Alex, He was saying it didn't look like water as in it looked like the scotch that he had just ordered, not saying it SHOULD have been water.
