Uhuru is actually the correct way of spelling the Swahili word for freedom. That's the word that her name originates from.

In the official Star Trek Encyclopedia, they spell her name Uhura. Everything in the Star Trek Encyclopedia is official.

Okay, in that case Uhura's name was mispelled "Uhura" in every other movie and TV episode she was listed. One suspects the other movies, and the TV series, would be the "official" source for the spelling of the character's name.
